QuestionHello: I wanted to cook dinner for my boyfriend and his parents, fixing corn on the cob and having potatoe dish of some sort. He says corn is a starch and that he doesn't want two starches. I've always assumed corn was in the vegetable category and thought this was a safe menu. Could you please advise? Thanks!
AnswerHello Holly!
Thank you for your nutrition question. Yes, corn would be considered a starch. However, corn is a grain that is commonly eaten as a fresh vegetable. So you could serve it as a vegetable along side potatoes. Less starchy vegetable options would be vegetables such as spinach, broccoli, lettuce, greens, carrots, chilies, peppers and tomatoes.
