Greetings and thanks for your question.
As you may have in my biography, I eat a low carb menu. For me, there are lots of ways to come up with a healthy meal in only a few minutes. My tips for doing this are below.
Breakfast:
a) eggs fried in olive oil (8 minutes)
b) Eziekiel bread toast with butter (2 minutes)
c) Unsweetened yogurt (I love the FAGE brand) with a few raisins or SweetPerfection (1 minute)
Lunch:
a) fresh salmon in pyrex dish with olive oil and spices, cook in toaster or regular oven (10 minutes)
b) tuna or turkey or chicken salad from canned source. Mix with canola oil, and chopped olives, and/or water chestnuts, and/or celery.
c) fresh mixed green salad with tomatoes, green peppers, and roasted almonds. Quick dressing: 2 parts olive oil and 1/2 part balsamic vinegar or lemon juice, salt to taste.
d) organic lunch meat wrapped around avocado slice with canola mayonnaise dressing
Dinner:
a) broiled lamb steak with green salad and cooked carrots.
b) stir-fry of broccoli, onions, mushrooms, and sliced chicken breast in peanut oil. Create sauce from soy sauce, a bit of teryiaki, 1 TBS erythritol and lemon juice.
c) curried salmon made from cooking frozen vegetables in sauce pan, drain excess water, mix in olive oil and curry seasoning and canned salmon (may also use chopped hard boiled eggs). Remove from heat and mix in yogurt (FAGE tastes great).
I created my recipes from one strategy. I start with the ingredients I believe to be healthy for me. Then, I scanned recipe books (my favorite is the Fannie Farmer cookbook written in 1938) to find recipes featuring these ingredients. Then, I modified the recipe to use ingredients that work for me (e.g. I replace dairy with yogurt with coconut cream).
