Tomato nutritional substitute

Question
I am in Australia where we have the Kick Start diet which gets you on the road to healthy weight loss. The basis of it is a vegetable soup which is largely tomato (fresh and tinned). I don't like cooked tomato but know that if I leave it out the nutritional value of the soup is lost. Is there another vegetable or combination of vegetables that can be used instead?

Answer
While there is no exact substitute for a tomato, you can try using the pureed pulp of squash chosen from the group of summer squash and the pureed pulp of peppers chosen from the group consisting of sweet peppers which have ripened to a red color.  Mix these ingredients in the ratio of roughly two parts of squash pulp to one part pepper pulp. Measure the amounts by using the raw vegetable weight.

Thank you for your question, Robyn.  I hope that my answer was helpful.
