QuestionHi Dan,
I have high cholesterol and triglycerides and am on medication for them. I switched from potatoes to rice but have still been gaining a little excess weight. Since rice is starchy and I tend to eat large helpings with vegetables, I was wondering if there would be a decent rice substitute that would have much less starch or maybe no starch at all?
Would you know of any foods, vegetables, or grains, where I might be able to eat a large helping and not have the starch to contend with?

Focus on vegetables, especially high-water, low-starch such as all lettuces, cucumbers, celery, tomatoes, cooking greens, spinach, broccoli, summer squash, green and yellow beans, cauliflower, radishes, onions, even beets and carrots... Some sweet potaotes are o.k. Use brown rice, oatmeal, buckwheat, quinoa, millet, amaranth, and sometimes 100% stoneground whole wheat. Also use pumpernickel and rye. All of these grains are good. Your plate should be 75% vegetables and 25% grain or lean meats- eat salmon (omega fatty acids lower cholesterol)!
Snack on a handful of walnuts or almonds. Sprinkle milled flax seed over your cereal. These are good fat sources. Use olive oil and hemp oil. Never use margarine!!! Cut back on butter.
Most likely your high cholesterol and triglycerides were not caused by eating potatoes and rice. Eliminate all of the simple carb foods including soft drinks, candy, chips, fries (all fried foods), and ALL white flour products (white bread, muffins, bagels,pretzels...). Cut back on beer and other alcoholic beverages. No bottled 'tea' that is really full of sugar with almost no tea, you know the brands- they are everywhere.
Avoid all hydrogenated oils, always! These are trans fats and are a huge factor in high cholesterol. Also always avoid high fructose corn syrup. Read all labels.
Get the book- The New Glucose Revolution, great info on low-glycemic eating with many recipes. Its the sugar!!!
Take a good EFA (omega) supplement containing fish oil. Also vitamin C, E, A and antioxidants.
