I have recently implemented a much healthier eating plan. I am trying to eat 5-6 small meals per day, consisting of a healthy protein and carb and small portion of healthy fat. Something like "The Zone". My mornings are typically hectic, trying to get the kids up, ready for school and to the bus by 7:30. I know I can quickly make a protein shake with protein powder, nf. yogurt and frozen berries.
But I was wondering if it is okay to make a batch of egg whites, veggies (perhaps like spinach or broccoli) and ham or low fat Canadian bacon, and freeze it? I remember a long time ago using a recipe from South Beach which used egg beaters and spinach made ahead of time, and you baked them in the foil muffin tins and then froze them.
Can egg whites, egg beaters or scrambled eggs be frozen successfully like this made with fresh broccoli and ham or cheese? I'd love to just microwave and go in the morning and/or have them on hand for a healthy snack.

You can freeze your egg whites for future uses, Linda. I would suggest that you place each egg white in a separate compartment of an ice cube tray and freeze, then put the frozen cubes of egg white in a zip-top bag so that you easily know how to measure them (ie. when a recipe calls for dipping in an egg wash, I use 2 egg whites per 1 whole egg called for in the recipe).
