To remind you I am a 27 year old female who exercises for about 60-75 minutes 7 days a week. I have been thinking about cutting my days to 5. Do you think this will be a wise decision?

I think it would be VERY wise, you will likely make greater progress as you will recover more and be able to train better and progress more on the days you train,
remember you progress OUT of the gym when your healing NOT in it, we all need time off.
