Processed meats are things like bologna, pressed sausage, etc lunch meats. Ground up leftovers of meat that are pressed with binder.
I dont understand on the other question? red meat is beef, lamb, deer,even pork etc, chicken is a none red meat as is turkey and other foul.

QUESTION: I'm probably not explaining my question correctly. I'm just trying to find out if chicken, beef and pork are considered processed. For example, if I buy beef, chicken breasts or pork chops that have been packaged in the store by the butcher, are they considered processed?

No those are whole foods. Just real meat. I guess if you were technical yes the cow, or pig or chicken has been processed by the butcher, but, they are not what we think of technically as processed meats, those are things like pressed lunch meats like Bologna and fake pressed chicken nuggets etc.. Those meats are whole foods,
