QuestionWith all the craze of good fats vs. bad fats, it amazes me to watch all these cooking shows where the chef/cook is shown adding olive oil to all sorts of dishes all while making the point about having good fats in the diet. I do think it has gone overboard to some degree. I they make it seem as though as long as you use a "healthy oil" you can use it as much as you want. This leads me to my actual question. If I take a multi-vitamin with a meal, how many grams of fat should be in that meal to assure good metabolism of the fat-soluble vitamins contained in the multi-vitamin? Thank you for your time.

I will put it this way. There are at least 3 known essential fatty acids, and there are at least 6 knows essential amino acids. Meaning you MUST eat them in order to just maintain health let alone be optimal. There are NO!!! such essential carbohydrates. Fats are very important and direct links to hormone, cognitive and cardiovascular health. What went over board was the hatred of fat in the uneducated low fat high carb craze that led to our obesity epidemic worsening by many fold.
In general a person should roughly get .5-.6 grams of healthy fat per lb of body weight or more if the are avoiding the junk simple carb sources like processed grains etc for the most part. We are built to eat a fairly high fat diet for the most part. So if one was 200lbs they would get 100 or grams from healthy fats saturated, and unsaturated only avoiding trans fats. then get your protein in and fill the gaps with largely healthy carbs (fruits and veggies)
Fat doesnt make you fat or unhealthy and the inverse can very well be true.
