QuestionHello, I have been reading on the health benefits of spelt flour and I would prefer to use it as opposed to wheat flour. But, the problem is with the carbs, I noticed that spelt has the same amount give or take as regular flour. I was wondering if those carbs really count or if the actual net carbs lower spelt flour carb's count? So, basically, if I was low carbing to lose weight would the spelt flour be a good choice to use to make my own bread and muffins?

You ask if spelt flour is a good choice for losing weight. It's not really that good. Not from the weight-loss perspective that I work with that comes from Dr. Tom Cowan. Although a lot may be said about how spelt can look like a better choice over wheat. However it isn't in "our" weight-loss program. At least not in the active weight-loss cycle. My best recommendation is to get a copy of "The Fourfold Path to Healing" and read his weight-loss program. As soon as you get the idea that the overweight condition is symptomatic of being under-nourished then your thinking about weight-loss will naturally gravitate toward learning how to be very well nourished! Then you will learn about nutrient-dense foods (very well presented in "Nourishing Traditions" By Sally Fallon). Spelt flour is simply not a nutrient-dense food. I personally wouldn't waste my precious digestive forces on those products and especially when you are wanting to loss weight.
