To my knowledge there is no reduction in nutrition merely from placing a food in a jar or can ;)
Only a few minerals have mandatory listing on food labels (calcium and iron) so you won't find them there. Check the USDA nutrient data base at http://www.nal.usda.gov/fnic/foodcomp/search/.
