QuestionI am making smoothies in the blender using dehydrated vegetables. Asparagus,carrots,beets and about 10 others.
I was wondering if I am getting full value of the nutrients or does some neutralized others in the blending process.

Thanks for your question. Congratulations on doing your body such a huge health-favor by using dehydrated veggies in your smoothies! That is a great idea! You don't have to worry about some veggies neutralizing the nutrients of others. That shouldn't happen. It is actually very good that you are using such a wide variety. This is just a fabulous way of revving up your nutrient intake. Super for kids as well.
While I mostly juice fresh veggies, not everybody can do that. And smoothies are very popular right now. Utilizing dehydrated vegetables in smoothies is a good option to include in your nutrition plan. To turn the smoothie into a real meal, you can also add ground nuts. This will give you both a protein and a healthy fat.
Just try to drink the smoothie immediately if possible. The longer it stands, the higher the nutrient loss will be.
