This is a controversial topic as some experts say one thing and some say another about the health benefits or detriment of cooked potatoes.
In my opinion, cooked potatoes should not be labeled simple carbohydrates and are not harmful to your health. Cooked potatoes have 7% resistant starch which is a functional fiber that is very healthy for the body and helps slow the digestion of sugars. Even though potatoes do have a lot of starches that are broken down quickly, this fiber helps slow the process and it is NOT NEARLY THE SAME as eating white table sugar or eating junk food.
In my opinion, potatoes are a fine source of carbohydrates and nutrients. Most of the nutrients do come in the skin, however, so I always eat the skin with my potatoes.
