Different Weight Loss Recipes

It often seems a huge challenge that while you follow a weight loss plan, you also want to find a way to have fun eating. Food isn't just the nutrition that keeps us going; it has a great psychological affect on us too. If we don't like what we're eating, chances are we won't put up with it for long. But that's not how it has to be. There are a great number of weight loss recipes out there that are both low in calorie as well as great in taste. Here is a collection of some of my favorites;

Broccoli Salad

Ingredients:

1 head broccoli

1 small red onion

3/4 cup nonfat mayonnaise

3 Tablespoons sugar

1 tablespoon red wine vinegar

6 slices turkey bacon -- cooked and chopped

1/4 cup pecans



Directions:

Cut broccoli (including stem) into small pieces and blanch in boiling water for 3 minutes. Rinse with cold water and let drain. Finely chop red onion. Mix first 3 ingredients in bowl until well combined. Add broccoli and onions. Refrigerate 2 hours. Before serving add bacon and pecans.

6 servings.

Crockpot Salsa Chicken

Ingredient:

1/2 package reduced-sodium taco seasoning mix

1 cup salsa

4 skinless boneless chicken breast halves (3 oz each)

1 tablespoons cornstarch

1/4 cup light sour cream

Directions:

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours.

When ready to serve, remove the chicken from the pot. Place about 2 Tablespoons cornstarch in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

4 servings.

Ingredients:

1/3 cup chopped pitted dates

2 tablespoons warm water

2 cups vanilla almond milk, chilled

1/2 cup fat-free vanilla soy or dairy yogurt

1 very ripe banana, frozen

4 ice cubes

1/8 teaspoon ground nutmeg, plus extra for garnish

Directions:

1. Put the dates in a small bowl and sprinkle with the warm water. Let soak for 5 minutes to soften, and then drain.

2. In a blender, combine the dates, almond milk, yogurt, banana, ice cubes and the 1/8 teaspoon nutmeg. Blend until smooth and frothy, about 30 seconds.

3. Pour into tall, chilled glasses and garnish each with a dusting of nutmeg.

French Omelet

Ingredients:

2 eggs, lightly beaten

1/2 cup egg substitute

1/4 cup fat-free milk

1/8 teaspoon salt

1/8 teaspoon pepper

1/4 cup cubed fully cooked lean ham

1 tablespoon chopped onion

1 tablespoon chopped green pepper

1/4 cup shredded reduced-fat cheddar cheese

Directions:

1. In a small bowl, combine the eggs, egg substitute, milk, salt and pepper. Coat a 10-inch nonstick skillet with nonstick cooking spray and place over medium heat. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath.

2. When eggs are set, sprinkle ham, onion, green pepper and cheese over one side; fold omelet over filling. Cover and let stand for 1 minute or until cheese is melted.

Serves 2

Apple Berry Fruit Leather

Ingredients:

3 cups apples, cored and chopped

1 cup raspberries

2 tablespoons frozen orange juice concentrate

2 tablespoons honey

1 teaspoon cinnamon

1 teaspoon fresh lemon juice

Directions:

1. Preheat oven to 140?F.

2. Using a blender, blend 1 cup of apples, the raspberries and the orange juice concentrate until smooth. Add remaining apples and blend until smooth. Pour apple mixture in a medium sized bowl then stir in the honey, cinnamon and lemon juice.

3. Line a baking sheet with plastic wrap and tape to edges. Do not use wax paper or aluminum foil since it's difficult to remove the fruit from these items.

4. Pour apple mixture on the plastic lined baking sheet and spread with a rubber spatula until it's 1/8 inch thick. Leave about 1/2 inch of space open from edge of pan to allow fruit to expand while drying.

5. Bake in oven for 4-6 hours. Fruit leather is done when it is no longer sticky to the touch. When done, roll the fruit with the plastic wrap the long way. Cut into 2-inch pieces. Store pieces in an airtight container.

Serves 8-10
