The Paleo Diet is dairy free, gluten free and soy free. Parents maybe faced with a dilemma with children that are cow’s milk intolerant. Other parents may prefer a plant based diet reducing cholesterol and fat consumption.

Paleo Diet Alternatives to cow’s milk:

- Coconut Milk: Paleo friendly alternative to cow’s. Plant based from the milk of coconuts. Dairy free, lactose free, gluten free and soy free. Source of calcium and vitamin B12. Good for baking, in cereals and shakes.

- Almond Milk: Plant based cow’s milk alternative. From the almond nuts creamy and has a nutty taste. Good source of calcium and lactose free. Good source of vitamins A, D, and E. Used in cereals, puddings, shakes and baking.

- Hazelnut Milk: Plant based milk for the hazelnut. Good source of calcium, riboflavin and vitamin A. Hazelnut milk in low in sodium. Can be used in baking and cereals

- Hemp Milk: Plant based milk made from hemp seeds. A good diabetic cow’s milk alternative comes sweetened and unsweetened. Flavor is rich and creamy. Hemp milk contains omega-3 and omega-6, calcium, antioxidants and protein.

- Unsweetened hemp milk and almond milk are a great cow’s milk alternatives for diabetics.

Cow’s milk is rich in calcium. The benefits of calcium are healthy bones and teeth.
Review vegetables, fruits, nuts and seeds that contain calcium:

Vegetables containing calcium: Green leafy vegetables tend to be rich in calcium mustard greens, collard greens, Chinese cabbage, spinach and dandelion greens. Calcium rich green vegetables are not limitless green leafy vegetable additional vegetables: rhubarbs, artichokes, okra and broccoli.

Fruits: Dried prunes and dried raisins, oranges (also containing vitamin C), papaya, apricots and papaya.

Almond Pancake Recipe
Top this delicious Caveman breakfast recipes. Top with almond butter and or your favorite fresh fruit. Considered fresh strawberries, bananas, berries and etc. (optional).

Ingredients:
- 2 eggs
- 1 tsp. gluten free vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups almond flour
- 1/2 tsp. unrefined sea salt
- 1/2 tsp. baking soda

Prepare:
1. Beat eggs and mix in other ingredients until smooth then stir in almond flour
2. Oil griddle with coconut oil over medium heat.
3. Fill spoonful with batter onto skillet.
4. When bubbles appear flip pancakes and cook other side.

Roasted Chestnuts

Ingredients:
- ½ pound chestnuts

Preparation:
- Top of each chestnut cut X with sharp knife through the chestnut skin. If not marked with X chestnuts shell can explode during baking.
- Put chestnuts in shallow baking pan at 425 F for approximately 35 minutes. During baking shake pan several times so chestnuts are evenly cooked
- While still warm enough to touch peel chestnuts. Once cooled chestnut very difficult to peel.
