Recipe #4
Ingredients
- 1 bulb of garlic clove (finely sliced)
- 6 slices of uncooked turkey bacon
- 3 pounds of uncooked potatoes (about 6 potatoes rinsed)
- 4 cups of chicken broth
- ½ tablespoon salt
- 1 ½ tablespoons thyme (fresh and chopped)
- ¼ tablespoon black pepper (freshly ground)
- 6 tablespoons sour cream (fat free)
- 6 tablespoons scallions (sliced)
- 6 tablespoons cheddar cheese (low fat)
Directions
This recipe with hash browns garners a great flavor of fresh baked potato dressed on the soup. Other dressings like turkey bacon and fresh thyme is a good way to enhance the flavor of this soup.
Preheat the oven to about 400 °F and in a foil, wrap the potatoes and the garlic and place it in the oven. Bake them for about 45 minutes, (until the garlic is soft and squeezed). Once the garlic is cooked, remove the pan and let it cool. Whereas, let the potatoes get cooked until they are tender too. Meanwhile, take the turkey bacon and cook it on a medium-high heat in a large saucepan. Cook the bacon until they are brown and once they are ready, place them on tissues to drain off the extra fat. Next unwrap the garlic and add them to the pan as well. Peel the potatoes and add them too! Take a masher and mash the potatoes. Then add thyme, chicken broth, salt and pepper to taste and stir all of this gently and nicely. Cook the soup for about 5 -10 minutes. In individual bowls serve the soup hot and top it with 1 tablespoon of sour cream, cheese, cooked bacon and scallions. Again grind some fresh pepper if required and enjoy the soup!
